How to Bus a Table
Whether I consider it a hidden talent or not, thanks to the bussing of 500+ tables in the last 5 weeks, I think I would call myself an almost expert.
You always start by studying the table. Ask yourself these questions: Is it mostly cleaned off dishes or is there lots of food to scrape? Which glasses should I try and empty out and which glasses should I empty them into? Is there a paper piece over the table or is the just the wood? Once you have evaluated the situation, start with the napkins. Collect all napkins from the table and place them in a chair; you will pick these up fist after condensing everything. Now go for the glasses: don't stack more than 3 together but make as many stacks as possible. Remember: minimal trips is the goal. Now that you have your glasses condensed, collect all silverware and disperse between the least full cups/least high stacks. Condense everything you have condensed into one part of the table. Based on the amount of food, now it is time to plate combine. You want all the food condensed on the smallest plate possible so start your scraping and once they are scraped, start your stacking. Hopefully you can get all plates into one, maybe 2 stacks. If your table does not have a paper on top of it collect all reminding trash and place where there is room. Now it's time to carry. Start by placing the wad of napkins under your arm pit (I prefer my left). Then put 2 glass stacks between your left arm and chest. (Warning, you will need to do lots of leaning now as your arms are impaired to t-Rex arms so watch out for spilling of drink mixes from your cups). Lean and pick up your next glass stack if it exists and put between right arm and chest. You now have 2 hands remaking to pick up your one or two plates stacks. Walk carefully and quickly now to the bus room. (In procedures realize once you only have 2 remaining items one goes in each hand). Properly disperse items in bus room and return to table. Take remaking items repeating above items if needed. Once complete gain the proper washing devices or new paper to place on table. Grab proper number of bread plates and silver wear, place them on the table, return to the host stand and let the head host know you are done! Congrats, you can now bus a table. (Warning: you will probably mess up your first 50 times but it'll be okay.)
